Mayonnaise
Mayonnaise is a white sauce based on oil and served cold. It is commonly eaten with fries, snacks, or used as a base for other sauces. Mayonnaise can only be called mayonnaise if it contains at least 70% oil. Anything below this percentage is called “fritessaus” (a lighter mayo-like sauce). Most Dutch mayonnaise contains around 80% oil. Other key ingredients in mayonnaise are egg yolk and mustard. Egg yolk plays an important role in the production of mayonnaise as it acts as an emulsifier. Additionally, other flavorings such as vinegar and salt are often added.
What is Vegan Mayo?
Vegan Mayo, as the name suggests, is a vegan version of mayonnaise in which the egg yolk is replaced by other ingredients. Vegan Mayo is suitable for vegan and vegetarian diets. A sauce may only be called mayonnaise if it is made with egg yolk. Since Vegan Mayo contains no egg yolk, it is called “Mayo” instead of mayonnaise.
How is it made?
The production process of Vegan Mayo largely resembles that of traditional mayonnaise, except that no egg yolk is used as an emulsifier. Instead, other ingredients are used, often a starch such as potato starch.
How does it taste?
The taste of plant-based mayonnaise is often different from traditional mayonnaise, since an important ingredient is replaced by another product. Of course, taste varies between brands.
Usage
Vegan Mayo is used with fries and snacks but can also be used for other purposes, such as a base for other sauces or dressings.
